DOSAGE

Extra Brut : 5g /liter

 

VINIFICATION

70% 2012 base wine + 30% reserve wine (2009-2010-2011)

Malolactic fermentation carried out at 100%

42 months ageing period on laths

TASTING NOTES

Eye: Pale gold color with slightly silvery, fine and lively bubbles Nose: Notes of lemon or Granny Smith apple with a tangy nose first, followed by more tasty notes of brioche

Palate: A right and bright champagne with nice citrus notes

Seafood platter, scallop carpaccio, tuna tartar sauce, ceviche ...
